Most of my horses have no more than 2 gold/green stats. Some of my horses also have no stats. I've looked through this Discipline Summary, and each competition evaluates 4 disciplines. How do I choose competitions for my horses since they only have maximum of 3 stats? Thanks for your help !

You should first consider conformation over breeding report when thinking about competition. An uphill horse who has a really great strength report simply won't do as well against a downhill horse with perhaps only an average strength report in something like log pull.
These three horses have similar but not the same conformation, so you should consider competitions with a downhill conformation or those with higher hip versus low tail set, for instance reining, cutting, barrel racing, they're too tall for in-hand jumping, but you also have log pull, marathon driving, obstacle driving, and cross country.
Antelope might do really well in the log pull comps... except she doesn't have much of a great report for log pulls. She might do reasonably well in marathon despite her poor tempo. However she'll probably do best in Obstacle driving (this is assuming she has a good competition heart, meaning she likes or maybe has the 'genes' to compete successfully and successively).
Caramel and Iridescent Drift are much lighter built then Antelope so you probably want to lean toward the western disciplines or perhaps cross country.
Caramel may do very well in reining, cutting, barrel racing and perhaps even cross country.

But this only narrows down what they may be good performing in. There is more that determines if they can perform and how well they'll do. Really the only way to see how they'll compete is to actually enter them and based on their competition scores, evaluate how well they are likely to do.

Not true. The breeder's report factors in all aspects of a horse's potential -- genetic and conformation.

Well, that may be so. However I've had more luck checking physical conformation first then breeder's report second for the few horses I've trained up and competed. It's only one extra step.
