Garnet is a Grulla Roan Tobiano. You can also say Grullo Roan Tobiano per your preference, as both mean the same thing.

Cookie is Black. He might be Metallic which will be more obvious when he's older.

Latte is a Silver Brown Dun Tobiano.

He has flaxen and the graying gene.

I think this little one might either be a plain Black or a Smoky Black - not quite sure as they are just that hard to peg shade in-between (maybe also metallic, but have them grow till full height - untrained - and then you can be sure); so either one of these:
Metallic Smoky Black - E_ a/a Cr/n M/m
Smoky Black - E_ a/a Cr/n
Metallic Black - E_ a/a M/m
Black - E_ a/a
