How would I be able to change temperaments, and what do they do for the horse? Thought those two may just go together so I just asked them both :).

I think I may have to wait till the future, as I have to get a little more space but that shouldn't take to long .

For me:(In the event I may be wrong, it still works...)
There are five temperaments in the game so far. In ascending order. Take it like grades. (in real life school)
Bombproof, Calm, Even-Tempered, Spirited and High Strung.
To make the temperament "higher" you can feed it either Weight Gain Mix, Sweet Feed or Yellow Corn in a barn. These are feeds high in sugar.
To make the temperament "lower", you should make sure you put the horse in a pasture and that it is ingesting more protein/fibre than sugar.
To quote larissar, "temperament plays a part but it looks at the horses genetic "base" temperament which doesn't change. The actual temperament value can change depending on what the horse is fed, and that would affect the current stats, potentially improving them"
Changing temperaments are not difficult, the lowest temperament is Bombproof, while the highest is High Strung.
During competing, temperament is also a factor, so certain types are better for more active competitions, but can propably sometimes cause bigger differences in results.

Oh, one more. Horses born with the Bombproof temperament will almost never change their temperament.
